A Favorite Family Recipe

If you have a family full of picky eaters like I do, you know how amazing it feels when you make a meal that every single person looks forward to. For our family, this easy Beef Stroganoff is one of those meals. It's simple, it comes together quickly, the slow cooker does most of the heavy lifting and everyone walks for seconds. Family dinner success for sure!

The ingredients in this recipe are ones you might already have on hand.

Beef stew meat is the star of the show, though I also like to slice up a chuck roast and use that instead. There are many other cuts of meat that work well in this recipe. If you want to know more about stew meat, and the differences between the different cuts, head over to my Beef Stew post where I discuss those options.

In addition to your beef, you'll be using beef broth, onions, garlic, Worcestershire sauce, garlic powder, onion powder, salt and pepper. These items are combined and added to your slow cooker to do their thing. And let me tell you, after a few hours that thing smells incredible.

While it's not required, if you can I like to give this a quick stir every few hours. If you do so, make sure you get the lid off and back on as quickly as possible to minimize heat escape.

After cooking for a few hours, a bit of additional beef broth is combined with cornstarch, to help thicken your sauce. That, along with sour cream and cream cheese, is added to the Crockpot. While the sauce comes together and thickens up, egg noodles are cooked according to package directions, and then it all comes together. Deliciously. Let me tell you, I could eat that sauce with a spoon!

One thing I do not add to my Beef Stroganoff is mushrooms. Most of my household does not like them, so they are a pass for us. If your family enjoys mushrooms, feel free to add about 8oz of freshly sliced mushrooms in at the beginning, when you start cooking your stroganoff.

A Note About Slow Cookers

I have three different slow cookers in different sizes, styles and ages. Each and every one cooks differently. One of them runs hot – extremely hot. Even on low that thing is an inferno. This meal would likely be more than ready to go in six hours. In this recipe I list eight hours, which should safely and fully cook your meat until tender.

That said, your slow cooker might run on the hot, or cold side, and you'll need to adjust your cook time, or temp, accordingly. I suggest keeping an end on it around the six hour mark the first time you make it, just to see where it's at. I say the first time, because I'm confident you'll make this one on repeat.

Serving Beef Stroganoff

This recipe makes such a complete and delicious meal, I find that pairing it with a simple veggie or salad is really all that you need. You can even add fresh or cooked peas to the dish, though my family prefers them on the side.

Other Great Slow Cooker Meals

I do love a great meal made in my Crockpot slow cooker. If you enjoy this meal, I think you'll really like my Beef Stew Crockpot Recipe as well as my Mississippi Pot Roast recipe. Heck, buy double the meat and make them both. Not only do I enjoy having an amazing meal ready at the end of the day, I find these dishes both reheat wonderfully. Having leftovers for lunch the next day never makes me sad!

Slow Cooker Beef Stroganoff

Slow Cooker Beef Stroganoff  combines savory beef, an irresistible creamy sauce and delicious egg noodles to create an easy dinner that your family will request time and time again.

  • Slow Cooker

  • 2 pounds beef stew meat
  • 1/4 cup minced onion yellow onion suggested
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp minced garlic
  • 3 tbsp Worcestershire Sauce
  • 2 1/2 cups beef broth, separated low sodium if you are sensitive to salty flavors
  • 1 cup sour cream
  • 6 oz softened cream cheese cut into cubes
  • 3 tbsp corn starch
  • 12 oz pasta noodles, cooked per package directions penne, rotini and egg noodles work well
  • fresh parsley for garnish if desired
  • Prepare slow cooker by greasing or spraying interior with non-stick oil. Add stew meat, then top with onion, salt, pepper, garlic powder, onion powder, garlic and Worcestershire sauce. Stir well mix seasonings in with meat. Add 2 cups beef broth, stir and cook covered on low for 8 hours.

  • At the 8 hour mark, in a medium size bowl combine remaining 1/2 cup of beef broth with corn starch, and mix well, until all cornstarch is dissolved and incorporated into broth. Scoop out a few spoonfuls of the hot liquid from the slow cooker, and add it to the cornstarch and broth mixture, stir to combine. To that mixture add sour cream and cream cheese and mix until combined and smooth. Spoon the mixture into slow cooker, and stir to combine with ingredients in slow cooker. Place lid back onto slow cooker and allow to cook for 20 minutes.

  • During that final 20 minutes cook time, cook pasta according to package directions for a dente pasta. Take care not to overcook pasta. Drain, but do not rinse pasta. Add cooked pasta to the slow cooker and gently stir to combine. Serve immediately, topped with salt and pepper to taste, and fresh parsley or thyme for garish, if desired.

If your family enjoys mushrooms, 1 cup of fresh, sliced mushrooms can be added along with beef prior to cooking.

While this recipe cooks on low, you can certainly cook on high if desired. As slow cookers can vary greatly in their temperature, this can take between 4-6 hours.
